Working Mechanism:
The enzyme hydrolyzes the ¦Á-1,4-glucosidic linkages of gelatinized starch randomly to soluble dextrins, reducing the high viscosity of the starch slurry. Oligosaccharides,glucose and maltose are also produced.
Definition of Enzyme Activity:
The definition of enzyme activity:In 70 oC, PH6.0 for 1 minute, the enzyme quantity that can turn 1mg soluble starch into dextrin is one enzyme activity unit.

Condition:
1¡¢Temperature range: Best operational temperature 90 oC at least, quick liquefaction in 95-97 oC, stay active in 100 oC, for injection liquefaction, transition temperature can be 105-110 oC.2¡¢PH range: Effective PH range 5.5-8.0, Optimum PH range 6.0-6.5.Uses:1¡¢starch sugar and monosodum glutamate:PH:6.0-6.5, About 0.6L/1 ton of material(20,000 IU/ml).
